Here we take a look back at our time with the wonderful crepe creations from Legendary French chef Pierre Koffmann. Served up by our Hel’s Angels chefs, who received a master class by the man himself to perfectly combine his visionary flavours whilst served with a glass of Krug Grande Cuvée Champagne. Here are our favourites from the menu:A retro classic – La Suzette: Orange, lemon and sugar splashed with cognac and rum. Just be careful if you plan on flambéing!
Le Crabe: Delicate crab mixed with avocado and green apple. Pierre’s preparation makes it more than original, mixed with avocado it enhances the creaminess of Krug Grande Cuvée and the green apple reinforces at the same time its freshness.
Le Parmesan: Rich fruity flavoured 24-months aged Parmigiano Reggiano. A delicious savoury way to enjoy your crepe.
The perfect pairing with a glass of Krug Grande Cuvée. The pairing is just perfect as after tasting, the acidity and bubbles of the champagne clean the palate and prepare it for another mouthful.
For a gluten and dairy-free alternative:200gr gram flour 200ml water 1 tsp turmeric Large pinch salt A good grind of black pepper 1/2 red chilli finely chopped A sprinkle of chilli flakes 3 x spring onions finely chopped Small handful of coriander finely chopped
Whisk into a smooth batter. Heat up a non-slip pan with olive oil / dairy free spread Melt/ heat up and then wipe out using kitchen roll Ladle in batter and swirl round pan, cook for a couple of minutes oil one side flip over, cook for a another minute or so and serve Nice with mango / coriander chutney or by themselves If you want to keep it simple (or you’re short on ingredients) the flour and water with a little salt whisked together makes a lovely batter.
